Food trucks are getting more and more popular in Wichita and I’m LOVING it, especially when it comes to a late-night grub! During the end of the week, the go-to truck for me is El Chaparro Mexican Food, located at the corner of 29th and Arkansas. This taco truck or technically “bus”, is full of menu items that’ll cure any appetite.
Like many food trucks, you can pull into the parking lot (which I’d advise doing so with caution because it has its fair share of dips and bumps), and wait while your meal is prepared. However, they also own a part of the building next to the truck where you can dine in and enjoy your meal while it’s hot off the grill.

If you’re new to this truck, I’d highly recommend the Gringa, a delicious 12” tortilla with melted cheese and your choice of meat. You get a huge portion and it’s truly a staple of El Chaparro.
As for this particular visit, I ventured to try their Torta a Mexican-style sandwich with all the goodies you could ever want! The toasted roll has beans, meat, cilantro, grilled onions, tomato, lettuce, avocado, and sour cream. On the side is a tasty but spicy pepper that’ll add that fire to your bite if you crave that higher level of heat, like myself. There’s also a lime and salsa that I make sure to pour all over.
I ordered this Torta with asada meat (beef/steak meat) it has a good seasoning and the ingredients blend together for a merging of flavor. The ingredients were fresh and loaded on the bun.
Now it would be foolish of me to go to a Mexican food truck and not order tacos. I ordered asada(steak), tripas(intestines) and Al pastor(pork). The asada, much like my Torta had great flavor and is always a solid taco meat option. The tripas is an acquired taste for some and can vary in preparation. I like how they were crispy and overall just added texture and crunch to my taco, though some pieces were a little too cooked for my liking. The Al pastor, had a marinated-like flavor that I really enjoyed. Nothing over the top but a solid choice.
These tacos come with cilantro, cabbage, and onion with lime, grilled onions, and salsa on the side. I pile on the onions and squeeze the lime as expected followed by salsa for just the fix I needed.
